Cook pasta, and add chopped baby spinach

Cut chicken into cubes, strips or thin slices, whichever you prefer. Season, and fry in pan with some butter or oil. Add garlic, ginger and some chilli flakes if you're looking for some hot flavour.

Add your cooked chicken to your pasta, top with tomatoes, or any other veg you'd like (peppers) I added some spring onions

Make your white sauce. In a pot, melt some butter, add some flour, salt, pepper, mixed herbs, and milk. You can stir this mixture, with a whisk, if you'd like, so sauce is not lumpy, I however, only stir it every few seconds, I cook it on a high heat. Once the sauce is the consistency you'd like, add some grated mozzarella cheese. Some people like thick sauce, others runny - so it varies.

Pour the white sauce over your to your pasta dish

Add some grated cheddar cheese and top off with some chives
