Ingredients

  1. 1/2 cupwater (100 ml)
  2. 2 cupsflour (about 250 grams)
  3. 2 tablespoonsextra virgin olive oil (30 grams)
  4. 1/2 teaspoonsalt
  5. 1/3 ouncefresh yeast (or a pinch of baking soda)
  6. Chopped fresh herbs like chives, rosemary, etc
  7. Oil for brushing the crackers

Steps

    Combine all the ingredients and mix for 2 minutes at low speed. Remove the dough from the bowl. If you used fresh yeast, let it rise in a warm place for 30 minutes.

    Roll out the dough into a very thin sheet (I used a pasta machine). Use a ravioli cutter to divide the sheet into rectangles or squares. In a small cup, mix a little oil and salt, and brush the surface of the crackers (you can add seeds like sesame, flax, etc., if you like).

    Line a baking sheet with parchment paper. Place the crackers close together and bake in the oven at 400°F (200°C) for about 10 minutes.
