Herb crackers are very easy to make. You can also add spices like chili pepper, turmeric, curry, paprika, etc.

Combine all the ingredients and mix for 2 minutes at low speed. Remove the dough from the bowl. If you used fresh yeast, let it rise in a warm place for 30 minutes.

Roll out the dough into a very thin sheet (I used a pasta machine). Use a ravioli cutter to divide the sheet into rectangles or squares. In a small cup, mix a little oil and salt, and brush the surface of the crackers (you can add seeds like sesame, flax, etc., if you like).

Line a baking sheet with parchment paper. Place the crackers close together and bake in the oven at 400°F (200°C) for about 10 minutes.
