Ingredients

6 servings
  • 2.2 lbspork bones
  • 2 tablespoonssoup powder
  • 2 tablespoonssugar
  • 4 liters(about 17 cups) water
  • 1carrot
  • 1daikon radish
  • 2large cilantro roots
  • 2 tablespoonscoarsely ground pepper
  • 2 tablespoonssalt
  • 1onion
  • 2.2 lbsmature squash
  • Noodle soup toppings
  • 7 ozground pork
  • Pork meatballs
  • Sliced chicken
  • Rice noodles or vermicelli
  • Green onions and cilantro
  • Fried garlic (even better with pork cracklings)

Steps

  1. 1

    Blanch the pork bones in boiling water with salt for 3 minutes, then remove.

  2. 2

    Bring 4 liters (about 17 cups) of water to a simmer. Add all the prepared soup ingredients and simmer on low heat for 3 hours (recommended) or less if time is short.

  3. 3

    Prepare by blanching the meat in the broth and cooking the noodles until ready to eat. We like to crack an egg into it for extra flavor.
