Ingredients

30 minutes
4-5 servings
  • 4 tspoil
  • 1bay leaf
  • 1 tspcumin seeds
  • 1/4 tspfenugreek seeds (methi)
  • pinchhing/asafoetida
  • 1red chilli
  • 1 tspginger paste
  • 2 cupcut square shape pumpkin
  • 1 tspcoriander powder
  • 1 tspgaram masala
  • To tasteSalt
  • 1/2 cupwater
  • 1 tspaamchur ( dry mango)powder
  • 2 tbspfinely chopped Coriander leaves

Steps

30 minutes
  1. 1

    First pumpkin, cut the square and a large. now take a kadai, heat, oil, add bay leaves, cumin seeds, methinks, hing, red chilli and saute also, saute chilli and ginger paste.

    Then add pumpkin and saute for 2 minutes after add spice powder and salt for taste

    Saute for 2 minutes. Noe
    add 1/4cup water, cover and cook for 10 minutes.

  5. 5

    Now add aamchur andmix well and cook 2 minutes.

  6. 6

    Now, add chopped coriander and enjoy pumpkins ki Bhaji with roti.

very much enjoy cooking and do it well, but rarely hear strong compliments on my cooking. it’s just not in my husband’s nature to do that. I’m afraid that cooking leaves me feeling frenzied all too often, but every now and again I come across a recipe like the one I made for dinner tonight that do result in my feeling calm, because they come together so nicely.
