In a mixing bowl, combine instant coffee, sugar and water. Using a whisk, or ideally electric mix several minutes. The liquid will slowly thicken, turning from dark brown to a light golden brown. Stop when the texture resembles stiff peaks.

Fill with your choice of milk or plant-based milk. Spoon the coffee foam on top of each glass.

Stir to combine the coffee foam and milk before drinking. Add more milk if you like -- it's strong!
