Ingredients

  1. forPatties--
  2. 3medium sized potatoes
  3. 1 cupfinely chopped veggies(carrot&beans)
  4. 2 tbspoil
  5. as requiredFlavoring Masala (I used garam and chilli powder)
  6. 1/2 tspTurmeric Powder
  7. as per tasteSalt
  8. 2medium sized green chillies(opt)
  9. forouter layer--
  10. as requiredBread crumbs or 5 sliced breads
  11. 2 tbspCorn flour
  12. as requiredWater to make corn flour solution
  13. ForShallow frying--
  14. As required Oil

    Cut the medium-sized potatoes into four and finely chop the veggies (carrot and beans)

  2. 2

    In a pressure cooker, pour 1 glass of water directly and keep the veggies in a heat resistant bowl. Close it with the plate/lid(This prevents the water vapours from entering into the bowl)

    Above the Lid place the sliced potatoes and boil them together (keep it for at least 3 or 4 whistles)

  4. 4

    Once the pressure in the cooker is released, peel the skin of the potatoes and mash it using a masher or a fork and keep it aside.

    See if the veggies are dry. If not strain the excess water and keep them aside too.

  6. 6

    Now in a kadai or a deep frying pan, pour oil and add the green chillies and veggies together. Saute this for 2 mins

  7. 7

    After this, add turmeric powder and flavoring Masala and add the salt to taste. Saute it until the raw smell of the masala vanishes.

    Now add the mashed potatoes and give it a nice mix. Switch off the stove and let the mixture cool down to room temperature. Potato acts a binding element to make the patties(flat balls)

    In the meanwhile, mix water with corn flour(it should be in the flowy consistency and not thicker) If it is a non-veg recipe you can replace it with a egg(These are used to coat the patties and this helps to hold the bread crumbs with the patties)

    If you have breadcrumbs, you can use it directly. If not follow this method to make your own breadcrumbs😋 Take 4 or 5 sliced breads(salted-any brand and any variant).Finely grind them using a mixer. Now take a kadai and slightly roast(without adding oil) them to remove the excess water from it. Keep the stove in medium to low flame to avoid over roasting.

    Now it's time to assemble all of them together. Take the stuffing you have made and make small balls out of it.

    Place them in your hands and gently press them to get a circle shaped patti(as shown in the recipe picture)

    Firstly coat it with the corn flour mixture. Secondly coat it with the bread crumbs. If you want your cutlet to be extra crispy, repeat this step again(corn flour mix then bread crumbs)

    Now take a dosa pan or any shallow frying pan. Keep the stove in medium flame.Pour 2 or 3 tbsps of oil. Once the oil is heated, gently place the patties in the pan. If the bottom layer turns brown, flip it to the other side. Once you are done with cooking put the other batch.(Note: All your veggies are cooked, you are shallow frying this to make the bread crumbs to become crispy. So once it turns golden brown on both sides, remove it from stove. Don't burn it!!:)

    Tadaaa!!! Your vegetable cutlet is ready!! This is a not so oily yet healthy snack for your family.
