  1. 1big size eggplant
  2. 2tomato
  3. 4 tbspgreen matar
  4. 1/4 tspcumin and mustard seeds
  5. 1 tspcurry leaves
  6. 4 tbspchopped spring onion
  7. 1/4 tspturmeric powder
  8. 1/4 tspsalt
  9. 2 tbspoil

  1. 1

    Roast eggplant and tomato directly on fire and keep aside and let it cool

    Heat oil in a pan and add mustard cumin seeds and let it splutter. Now add curry leaves and sauté

    Now add chopped spring onion and saute. Add green peas and cook further till green peas become soft.Add green chilli and sauté.

    Add turmeric powder red chilli powder and salt. Now add mashed roasted and mashed eggplant and tomato and mix well.

    Cook baingan bharta for 4 to 5 mins on a medium flame.once done garnish with chopped spring onion and serve with chapati or rice.
