Red Pozole (No Oil)
A delicious recipe from my mom.
Steps

Rinse the hominy thoroughly. Place it in a large pot with half of one onion and 3 cloves of garlic. Cover with water and cook over medium heat.

In a separate pot, bring water to a boil. Turn off the heat and add the cleaned, seeded guajillo chiles. Let them soak for 30 minutes. After soaking, blend the chiles with half an onion, 3 cloves of garlic, oregano, salt, and some of the soaking water until smooth. Set aside.

Once the hominy is cooked, add the beef and cook for 1 hour and 30 minutes. After that, strain the chile sauce and add it to the pot. Simmer for another 30 minutes. Serve and enjoy.
