Ingredients

4 servings
  1. 1tray (1.1 lbs/500 grams) cooked crab meat
  2. 1 tablespoonolive oil
  3. 2 tablespoonsbutter
  4. 1 clovegarlic, finely chopped
  5. 1/2 cuponion, diced (brunoise)
  6. 1/3 cupred bell pepper, diced (brunoise)
  7. 1/4 teaspoonoregano
  8. 1/8 teaspoonground black pepper
  9. 1/2 teaspoonsalt
  10. 1 tablespoonchopped cilantro
  11. 1/4 cupwhite wine
  12. 1/2 cupmilk
  13. 1/2 cupheavy cream
  14. 4 sliceswhite sandwich bread, crusts removed
  15. 1/4 cupgrated Parmesan cheese
  16. for the topping
  17. 1/2 cupgrated Parmesan cheese
  18. 1/3 cupplain dry breadcrumbs (made from white sandwich bread, crusts removed, grated)
  19. 1/2 teaspoonpaprika

Steps

    Measure and prepare all the ingredients for the recipe. Soak the bread crusts in the milk and cream. Heat a skillet with the olive oil and melt the butter. Sauté the garlic, onion, and bell pepper together.

    Add the oregano, black pepper, salt, and chopped cilantro, and cook for 1 minute. Pour in the white wine and cook for 2 minutes to let the alcohol evaporate. Add the crab meat and heat through. Add the soaked bread with milk and cream. Heat. Add 1/4 cup grated Parmesan cheese and mix well.

    Divide the crab mixture into 4 ramekins. For the topping, mix 1/2 cup grated Parmesan cheese with the breadcrumbs and paprika. Sprinkle the cheese topping over the crab mixture. Melt a little butter and drizzle over the topping. Bake in the oven until golden brown. Use the broiler to brown the top. Garnish with crab claws.
