Ugandan Bean Stew

Cooking Instructions
- 1
Place the pan on medium heat. Add oil and let it heat up.
- 2
Add onions and garlic in the hot oil, then stir them well. Leave them in the pan until they turn to light brown.
- 3
Add tomatoes or tomato paste and then stir well. Leave them to cook until they’re soft and have separated from the oil.
- 4
Add green pepper, ginger, curry powder, black pepper, cumin, coriander, salt, and stir well.
- 5
Add beans and a half cup of water to the mixture. Increase the fire and let it boil until the water is almost done.
- 6
Add the remaining water into the beans and let them cook under high heat for 15 minutes. Reduce the heat after 15 minutes and let the stew simmer until the water has reduced halfway and it has a creamy oily layer on top.

White bean stew! White bean stew!
First day of spring, but here in Connecticut, today doesn’t really feel like it…I’m bringing you a traditional Spanish stew, perfect for cold winter days. I’ve known this dish since I was little—it was always in my home! 🥰It’s very easy to make and packed with flavor!Plus, white beans are rich in fiber (over 21gr per 100gr), which helps regulate digestion. They’re also a great source of B vitamins, especially folic acid, and minerals like potassium, calcium, phosphorus, magnesium, iron, and zinc. Chus Molinero -

Chickpea Stew Chickpea Stew
Being a cook is being an artist —You can mix ingredients in your fridge or pantry and get creative results! I had some chickpea cans I wanted to use and I decided to make this vegetarian strew which turned out delicious ! I used vegetables I had in my fridge and you can too! You can substitute the green peppers for red/orange/ yellow or add any vegetables you already have like celery or carrots. The important thing is that you make it with love and you get creative while doing it. Veggie K -
