Feta Shrimp with Brown Rice

My version some Greek Recipes. Great with fresh Italian or French Bread

Ingredients

30-45 minutes
2 servings
  1. 2servings of rice, white, brown, boiled, steamed, etc
  2. 1 tablespoonOlive Oil
  3. 1/2medium Onion, finely chopped
  4. 1large Garlic Clove, minced
  5. 1/2 teaspoondried Oregano
  6. 1/4 teaspoonpepper
  7. 1/8 teaspoonsalt
  8. 1 (14 1/2 ounce)can of diced Tomatoes, undrained
  9. 1/2 pounduncooked medium Shrimp, peeled
  10. 1/8 cupDry White Wine
  11. 1 tablespoonminced fresh Parsley
  12. 3/8 cupcrumbled Feta Cheese, the best you can find

Cooking Instructions

30-45 minutes
  1. 1

    In a large skillet, heat oil over medium-high heat.

  2. 2

    Add onion; cook and stir 4-6 minutes or until tender.

  3. 3

    Add garlic and seasonings; cook 1 minute longer.

  4. 4

    Stir in tomatoes and wine. Bring to a boil.

  5. 5

    Simmer uncovered, 5-7 minutes or until sauce is slightly thickened.

  6. 6

    Add shrimp and parsley; cook 3-5 minutes, stirring occasionally.

  7. 7

    Remove from heat and stir in 3 tbs cheese.

  8. 8

    Serve over rice and sprinkle with remaining cheese to taste.

Retired at age 55 and enjoying the mountains. I'm now 72, married for 50 years. :) I love to cook but I don't care if ingredients are Organic nor GMO, Gluten-free, low calorie, or low Cholesterol! And Never use low/no-Fat as I enjoy good food. I never take procedural pictures as most cooks know how to boil water and stir sauces.
