Ingredients

20 minutes
4 servings
  1. 200 gcherries (pitted and halved) [fresh or canned]
  2. 1 cupcherry tomatoes (halved)
  3. 1 cupsweet corns, (shucked and cut off the cob)[canned]
  4. 2avocados peeled, pitted and sliced
  5. 1/2 cupgreen olives (you can take black as well)
  6. 1cucumber (cut into pieces)
  7. 1/2 cupred currant berries/ Johannis berry (optional)
  8. Dressing:
  9. 1 Tbspextra virgin olive oil
  10. 2-3 Tbsplime juice
  11. 1garlic clove pressed or finely minced
  12. 1 tspsea salt
  13. 1/8 tspblack pepper (as per taste)

Steps

20 minutes
  1. 1

    In a large salad bowl, combine sliced cherries, sliced tomatoes, corn kernels, sliced avocado, green olives, cucumber, currant berries and press in a garlic clove.

    Drizzle the top with 2 Tbsp extra virgin olive oil, 2-3 Tbsp lime juice (adding it to taste). Add 1 tsp sea salt and 1/8 tsp black pepper, or season to taste. Toss the salad gently just until combined and serve.

    📌You can store this salad in a air tight container for 2 days in refrigerator.
