Ingredients

20 mins
  1. 1 tbspextra virgin olive oil
  2. 1/2 tspgrated ginger
  3. 2spring onion
  4. 1/2yellow pepper
  5. 1.5 cupspinach
  6. 1/2 tspred chilli flakes
  7. 4eggs
  8. to tasteSalt

Steps

20 mins
  1. 1

    Saute the ginger and spring onion in olive oil until tender

  2. 2

    Then add yellow pepper followed by spinach.

  3. 3

    Meanwhile, beat the eggs in a bowl with salt and chilli flakes

  4. 4

    Once all the moisture from spinach is cooked off add the egg mixture. Spread evenly and cook for 2 mins on each side.

Never thought of adding ginger to an omelette before, such a good idea and this looks delicious!
