Bombay halwa is a delicious sweet made out of very few ingredients. This sweet is made on special occasions or on festivals. This sweet is made out of corn flour that is why the texture of this sweet is chewy or rubbery which is very different from others sweets. But that thing makes it more interesting and delicious.

In a bowl mix corn flour and water very well.

In a non-stick pan add sugar and water. Now put this pan on low heat and keep stirring continuously until the sugar is dissolved completely. Now add lemon juice to it and mix well.

Add corn flour slurry to the sugar mixture and keep on stirring continuously on low heat. Add orange colour to it and mix well.

Now in this mixture add 1 tablespoon of ghee and mix it well until all the ghee is absorbed. Now add another table spoon of ghee and repeat the process.

When this mixture is a bit thick, add the rest of the ghee, dry fruits and cardamom powder and mix well. This mixture will get transparent and thick at this stage.

When ghee starts separating and the mixture starts leaving the edges of the pan and it comes together in the middle of the pan, halwa is ready.

Grease a square container and add the mixture to it. Level it with a spatula and sprinkle some nuts on top and pat slowly. Leave this halwa at room temperature for 4 to 5 hours to cool down.

After four to five hours, turn the container over on a chopping board and make pieces from halwa. This halwa can be stored in an airtight container.
