Make the sauce in a bowl, adding the water, rice wine, soy sauce, white vinegar, oyster sauce, honey, white pepper, sugar and dried chilli. Mix together.

Dice chicken and place in a bowl. Add corn starch, flour, egg and salt. Mix together until batter is smooth and coats chicken evenly.

Deep fry the battered chicken until golden brown then remove from oil and dry.

Add fried chicken to a dry frying pan. Add minced garlic and stir fry for a minute on low heat
- 5
Add the sauce to the pan. Bring to boil and then turn heat to low until it's gently simmering. Add a thickener made of corn starch and water mixed together.

Pour chicken and sauce onto a plate. Garnish with sesame seeds and spring onion greens. Serve
