Ingredients

Preparation time-10 mins, Cooking time-35 mins
3 people
  • For Papdi
  • 1 cupMaida
  • 1/2 cupAta or whole wheat flour
  • 2 Tbspbesan
  • as per tasteSalt
  • 1/3 cupghee
  • 1/2 tspajwain
  • as required Oil to fry
  • For Chaat
  • 3-4medium size potatoes boiled and coarsely mashed
  • 1 inch ” ginger chopped fine
  • 2-3green chillies chopped fine
  • 1medium tomatoes chopped
  • 1 TbspAamchur powder
  • 1/2 tspred chilli powder
  • 2 Tbspyoghurt
  • 1-2 TbspDalmuth coarsely crushed
  • For Chutney
  • 2-3 sprigscoriander leaves
  • leavesFew mint
  • 1/2size onion chopped
  • 1-2green chillies
  • as required Salt
  • 1/2 tspoil
  • 1ice cube

Steps

Preparation time-10 mins, Cooking time-35 mins
  1. 1

    In a cooker on 3 whistles boil the potatoes. Drain, peel and coarsely crush. Add red chilli powder and Aam chur powder and mix. Set aside

    In a bowl add Maida, Ata, besan, salt, ghee and ajwain. Mix. With chilled water make a dough like Roti. Keep covered for 20 mins

    Chop tomatoes and set aside. Make a Chutney of coriander, mint leaves, salt, onion, green chillies, oil and ice cubes. Set aside

    Coarsely blend dalmuth and set aside

    Mix the dough well and with a rolling pin make a Roti without using extra ata. With a circular mould make circles and set aside. Prick with fork

    In a saucepan heat oil in low to medium flame. Fry the Papdi in batches

    Now for plating put the mashed potatoes, chopped tomatoes, coriander-mint Chutney, Aamchur powder, yoghurt, and dalmuth coarsely crushed. Enjoy
