Ok I have never been to Mexico (very high on my To-do list) and I cant eat bell peppers - but this amazingly fast and flexible recipe is a winner everyweek in our house. As with Italian food I learnt "if you like it and have it then throw in the pan" lol Of course you can add bell peppers but I also think they over power the dish and its so perfect without. Also can make as Spicy (or not) as you like. - ENJOY :P

Ingredients

  • 2Boneless / Skin Less Chicken Breasts
  • Marinade:
  • 2 tbspFresh lime juice
  • 1 tbspSoy Sauce
  • 1 tspLiquid Smoke
  • 1/2 tspSalt
  • 1-3 TspChili Flakes (you know I like SPICY) up to taste
  • 1 TspSmoked Paprika
  • 1 TspOnion Powder
  • 1/2 TspCayenne Pepper, (or more, if you like it spicy!)
  • 4 clovesGarlic Minced
  • To Cook:
  • 1 TbspVegetable Oil, for searing chicken
  • 2 TbspButter, for searing chicken
  • 3small red, yellow, or orange bell peppers, sliced (Optional - I DONT USE)
  • 1Medium Onion, sliced
  • 250 mlChicken Stock
  • 5Tomatoes cut into Quarters
  • To Serve:
  • 12 (6 inch)Flour Tortillas
  • 1 cupshredded Mexican Mix cheese (optional)
  • 1Small Pot Sour Cream
  • 2 TspHot Sauce per FAjitas (optional)
  • 3Limes cut into 1/4s (optional)
  • 1 BowlGuacamole (see Recipe)
  • 1Large Bunch Coriander, (Devided as need more to garnish) Roots and Stem Added to stock and leaves Finely Chopped
  • 1 BunchCoriander Roots
  • 10Asparagus Sprears

  1. 1

    In a large bowl, combine lime juice, soy sauce, liquid smoke, salt, chili flakes, smoked paprika, onion powder, cayenne pepper, and minced garlic to prepare the marinade. Chop the chicken into strips about 1.5cm thick. Mix in with the marinade, cover and put into fridge for 45 min to 1 hour.

    Set presure cooker to saute heat the oil and butter then quickly sear the chicken in batches. Remove to dish. Add onion and lightly fry you might need add a little stock to de glaze all the amazing brown bits on the bottom. Add the rest of stock, coriander stems, bell peppers if using and return the chicken. Cook on high for 10 mins. Allow to naturally release for 10 mins.

    Remove the coriander steams. I turn on back to saute if too much liquid. Then add some tomatoe quarters and asparagus tips if not using bell peppers for colour. Heat a metal skillet (optional) and then ladel 2-3 large portions onto it quick queeze of lime and the coriander leaves and serve will still steaming to the table.

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
