Semur (sweet soy sauce stew) (eggs and paneer version)

Other recipes seem quite complicated spice wise, but in #mycookbook based on my mom's recipes, you only need sweet soy sauce (the first in my must have pantry ingredients).
Usually you put different proteins like chicken, beef, tempeh, or tofu. I want tofus in mine but I got a paneer deal this week.
Based on Dutch smoor so if you're Dutch maybe it looks familiar(?)
Can be eaten with rice or by itself.
Utensils: chopping board, knife, wok/large pan, ladle

Ingredients

1 hour
4-6 servings
  • 2medium onions
  • 2-3 clovesgarlic
  • 1vegetable stock cube
  • 2boiled eggs
  • 4-5medium potatoes
  • 500 gpaneer (or replace with other protein sources)
  • 5 tablespoonssweet soy sauce (kecap manis) (add 3 first)
  • to tasteSalt and pepper
  • 1/2 tablespooncoriander
  • 100 gvermicelli
  • Fried shallots (garnish)
  • 2 tablespoonsvegetable oil
  • 1 lwater

Steps

  1. 1

    Prepare and chop all the ingredients to bite-sized pieces (including onion, don't chop them too small).

  2. 2

    Heat vegetable oil, fry garlic and onion until fragrant. Add vegetable stock cube and coriander, some salt and pepper

  3. 3

    Add your water, eggs, and paneer cubes. Add 3 tablespoons of the sweet soy sauce.

  4. 4

    Boil in low heat until the stew boils and the potatoes are soft, should be between 30-60 minutes while you are doing some thing else. Taste one more time, add the sweet soy sauce one tablespoon each to correct the taste, as well as salt and pepper.

  5. 5

    Add dry vermicelli to the hot stew, wait until it soft enough before you eat the semur. Add fried shallots as garnish.

No-recipe, 1-hour or less batch cooker for 1. I usually buy grocery monthly, so recipes are usually pantry staples + dry ingredients. I also like microwave oven! Mostly SEA-inspired cooking. I apparently do a lot of fusions.
