Ingredients

Serves 10 servings
  1. For the dough:
  2. 4 cupsall-purpose flour (about 500 grams)
  3. 2 tablespoonssugar
  4. 1 tablespooninstant yeast
  5. 1 1/2 cupswarm milk (about 360 ml)
  6. 1/2 cupvegetable oil (about 120 ml)
  7. 1 teaspoonsalt
  8. For the filling:
  9. 1 poundground beef (about 450 grams)
  10. 1 cupchopped parsley (about 30 grams)
  11. 2tomatoes
  12. 1large onion
  13. 1red or green bell pepper
  14. 2 clovesgarlic
  15. 2 tablespoonstomato paste
  16. 1/4 cupolive oil (about 60 ml)
  17. 1 teaspooneach: sweet paprika, seven spice, cinnamon, allspice, and black pepper
  18. 1 tablespoonsalt
  19. Hot spice (optional)

Steps

    In a large bowl, combine 2 cups of flour, sugar, warm milk, and yeast. Mix well and let it rise for 10 minutes. Then add the remaining 2 cups of flour, oil, and salt. Knead until you have a soft dough. You can use it right away or let it rest for an hour.

    Finely chop all the vegetables in a food processor. Add the ground beef, olive oil, tomato paste, and spices. Mix everything well.

    Roll out the dough into thin rounds and spread 3 tablespoons of the meat filling on each.

    Transfer the lahm bi ajeen to a large skillet or baking sheet that fits its size. Place it over medium heat on the stovetop. When the bottom of the dough starts to cook, cover with a pot lid to trap the steam and cook the meat. It takes about 4 minutes until ready.

    Repeat with the remaining dough. Transfer each piece to a large tray and cover with sandwich paper. Stack them and cover with a towel or pot lid to keep them soft and moist.
