Lahm Bi Ajeen (Middle Eastern Meat Pies)

In a large bowl, combine 2 cups of flour, sugar, warm milk, and yeast. Mix well and let it rise for 10 minutes. Then add the remaining 2 cups of flour, oil, and salt. Knead until you have a soft dough. You can use it right away or let it rest for an hour.

Finely chop all the vegetables in a food processor. Add the ground beef, olive oil, tomato paste, and spices. Mix everything well.

Roll out the dough into thin rounds and spread 3 tablespoons of the meat filling on each.

Transfer the lahm bi ajeen to a large skillet or baking sheet that fits its size. Place it over medium heat on the stovetop. When the bottom of the dough starts to cook, cover with a pot lid to trap the steam and cook the meat. It takes about 4 minutes until ready.

Repeat with the remaining dough. Transfer each piece to a large tray and cover with sandwich paper. Stack them and cover with a towel or pot lid to keep them soft and moist.
