
Slow cooked lamb with garlic and caramelised onion

Steps

Preheat oven at fan 210°c. Place a tray in the oven with the butter and allow to melt while slicing the onions.

Remove tray and toss the onions garlic and thyme with the melted butter and season with plenty of salt and black pepper.

Rub the lamb shoulder with the melted butter and season again. Place the lamb atop the bed of onions

Blast the lamb in the oven at high temperature for 15 mins. Then cover with tin foil. Turn the oven down to 160°.

Slow cook for at least 2-3 hours.

Take the lamb out and let it rest. Place the tray of onions back into the oven on a high heat to caramelise.

Add the optional wild garlic leaves and blend the mixture to create a puree.

Serve lamb with the onion puree.
