Almond burfi

Dry roast the almond for 10 minutes. Cool and grind it in a blender to a fine powder(along with the peel.

Alternatively,Soak the almonds in hot water for an hour. Peel off the skin and then grind it in a blender to a fine powder(it's okay if it is slightly moist.)

Grease a plate with ghee and keep it ready.

Combine the sugar and water. Boil it till sugar dissolves. Stir in intervals.Allow it to boil and slightly thicken till you get a one string consistency.

Now add the almond powder. Mix well.

Keep stirring till it thickens.

You can add some ghee while stirring for some flavour, but it's optional1a

This takes around 7-10 minutes

When it thickens,immediately pour on a greased plate. It will set in 2-3 minutes.

Using a sharp knife, cut into shape of your choice.

Allow it to cool and set well, separate the slices

Store in a air tight container
