Combine a little coconut milk with the water in a pot and bring to a boil.

Once boiling, add the galangal, lemongrass, kaffir lime leaves, and smashed shallots. Add salt and the bouillon cube, stirring to dissolve. Let simmer for about 15 seconds.

Over medium heat, wait for the soup to boil again. Add the sliced chicken, making sure it’s submerged. Skim off any foam that forms.

When the soup boils again, add the remaining coconut milk. Lower the heat to medium-low and avoid letting the coconut milk separate.

When the soup comes to a boil again, add the mushrooms, fresh chilies, fish sauce, lime juice, and dried chilies. Turn off the heat and stir to combine. Taste and adjust seasoning as needed.

Add more lime juice or sugar to taste. Once the flavor is right, add chopped cilantro and serve hot with steamed rice.
