Pumpkin Kibbeh
A healthy, delicious, vegetarian dish with a new flavor.
Steps

First: Boil the pumpkin until very soft, then drain and mash it by hand or with a food processor until smooth.

Second: Gradually add the bulgur as needed, then add the flour and spices. Knead the mixture until it forms a cohesive dough.

Third: Mix the filling ingredients together. Taste and adjust the lemon juice, sumac, and pomegranate molasses to your preference.

Fourth: Brush a baking dish with olive oil. Spread half the dough in the dish, drizzle with olive oil, then squeeze out any excess liquid from the filling and spread it over the first layer. Top with the remaining dough and brush with more olive oil.

Fifth: Cut the kibbeh into squares or diamonds, making sure to cut all the way through so it cooks evenly.

Sixth: Preheat the oven to 350°F (180°C) and bake for 1 hour or longer, until the kibbeh is cooked through. Enjoy!
