My husband really loves spicy and numbing flavors. I found half a pack of plant-based ground pork in the fridge, not a lot, so I decided to try making Dan Dan noodles. He seemed to really enjoy it! The best part of making it yourself is you can adjust the spiciness to your liking. My version isn’t too spicy—just the right amount of numbing heat for a delicious kick!

Ingredients

Serves 2 servings
  1. 2 bundlesnoodles (about 7 oz / 200g)
  2. 5 ozground pork (about 150g) (vegetarians can use half a pack of plant-based ground pork)
  3. 4 clovesgarlic, minced
  4. 2 slicesginger, minced
  5. 2shallots, minced
  6. Chopped green onions (for garnish)
  7. Marinade
  8. 1 teaspoonsoy sauce
  9. 1/2 teaspoonsugar
  10. 1/2 teaspooncornstarch
  11. 1 tablespoonwater (add in two parts)
  12. 1little sesame oil and ground pepper
  13. Sauce
  14. 1 tablespoondoubanjiang (spicy fermented bean paste)
  15. 1/2 tablespoonSichuan peppercorn oil
  16. 1 tablespoonchunky peanut butter
  17. 1/2 tablespoonChinkiang vinegar
  18. 1 teaspoonsugar
  19. 1/3 cupwater (about 100ml)
  20. Soup Base
  21. 1 cupchicken broth (about 1 cup / 250ml)
  22. 1 1/4 cupswater (about 300ml)

Steps

  1. 1

    Marinate the ground pork with the marinade ingredients for 20 minutes. (Use the same method for plant-based ground pork.)

    Mix the sauce ingredients together and set aside.

  3. 3

    Heat oil in a pan. Sauté the garlic, ginger, and shallots until fragrant, then add the marinated ground pork and stir-fry. Since the marinade includes water, it will be easier to break up the meat at this step.

  4. 4

    Add the sauce and bring to a boil. Once the sauce thickens a bit, turn off the heat and set aside. (You can leave it in the pan to keep warm.)

  5. 5

    Cook the noodles according to the package instructions. Once cooked, rinse with cold water and divide into serving bowls.

  6. 6

    Bring the soup base to a boil. Meanwhile, spoon the meat mixture from step 4 over the noodles in each bowl.

  7. 7

    Once the soup base is boiling, pour it into the bowls. Garnish with chopped green onions.

  8. 8

    If you have peanuts, toast and crush them. Add half to the meat while cooking, and sprinkle the rest on top with the green onions. Adjust the amount to your preference.
