This is not the original chopsuay, but an American - Chinese version of chopsuay. The original one uses macroni and it has Italian herbs. But the American - Chinese version has noddles, vegetables, chicken, prawn, mushrooms etc. It can be made spicy or non-spicy. It has another counterpart named Chinese Chopsuay. The combination of fried noodles with vegetables and chicken spicy gravy with an egg is just awesome

Ingredients

4 servings
  • 2 bowlnoddles
  • 1 cupboiled shredded chicken
  • 1large onion
  • 1capsicum
  • 1carrot and 7-8 French beans
  • 1 cupchopped cabbage
  • 1 teaspoonfinely chopped ginger and garlic
  • 2 tbspschewen sauce
  • 2 tbsptomato sauce
  • 1/4 teaspoonsoya sauce
  • 1 teaspoonvinegar
  • to tasteSalt and black pepper
  • as neededOil to fry
  • 1 cupchicken stock
  • 1 tbspcornflour

Steps

  1. 1

    First boil the noddles. Then in a pan add sufficient oil. Now take a portion of the boiled noddles and put in the oil. Try to give it a round shape by spreading it with a fork. Make sure that noddles are fried on both the sides and becomes crispy. Now in a pan add oil and add the egg to make a pouch. Keep both of them aside.

    In a pan add oil, then add the finely chopped garlic and ginger. Saute it. Then add the chopped onion, carrot, French beans and cabbage. Saute it for 2-3 min. Then add the capsicum. Again saute it. Now add the boiled shredded chicken

    Now add the tomatoes sauce, schezwan sauce, soya sauce and vinegar. Mix it well. Then add the chicken stock. Add salt and black pepper powder accordingly. Now let it boil for 5 min. Then in a bowl add the cornflour add little water to make slurry. Now add this. Let it boil for 1-2 min. The mixture will become thick

    Now for plating. Add the gravy,then place a portion of the fried noodles and then the egg. Enjoy it hot

    Please note that if you are a vegetarian then you can use vegetable stock and instead of chicken use mushrooms, red and yellow Bell peppers.
