Esgarraet

Esgarraet is a traditional dish from Valencian cuisine made with a base of salt cod, roasted red pepper, garlic, and olive oil. I’ve also added sweet paprika. The name comes from the preparation method, where the cod is shredded into strips. It’s perfect served on a slice of toasted bread as a tapa, or as a healthy and simple summer appetizer.

Roast the whole red peppers, then peel and cut them into strips. If you prefer, you can use jarred roasted red peppers to save time.

Soak the salt cod in water for 24 hours, changing the water 3 or 4 times to remove excess salt. Avoid eating too much at once.

After soaking, shred the cod into strips. Season with crushed garlic, a little salt, sweet paprika, and plenty of olive oil.

Mix the shredded cod with the roasted red pepper strips and serve on a good slice of toasted bread.
