Does this ever happen to you that you crave the same food next day afrer it is finished? 🤷♀️ I made Quiche yesterday after a long time and was craving again today. I had no mood to eat roti wali anything in today's rain so I decided to make this relatively healthier version with whole wheat crust and more veggies. I didn't have butter so I used ghee in the crust 🤫. I enjoyed my jugaro version of Quiche for lunch. I am just giving you my own version but I think quiche is quite versatile, you can add ingredients of your choices. Keep one thing in mind that you carefully measure the ingredients so they can accommodate in your baked crust.

Take whole wheat flour, add salt and ghee, rub with your finger tips until it is mixed and looks like wet sand. Then mix with chilled water 4 to 5 tbsp or more (quantity of water depends on the quality of flour so it can be vary) Don't knead otherwise gluten will form and your crust will be hard. Make a ball of the dough and wrap it in clingfilm. Rest it in refrigerator for half an hour. - 2
Meanwhile make the filling. Cut the veggies, slice the mushrooms and shred the cheese.

Take a wok and add oil then add crushed garlic and sliced onion. Saute until it gets transparent. Add all other veggies, mushrooms and sliced chicken franks. Saute, add seasoning.

Let all the water dry if there is any. Leave it aside.

Roll the dough using some more flour if needed. Then set it in a 8 inch round pie pan. Crimp the edges and blind bake it for 20 to 25 min.

First add cooked veggie mix on the crust, then spread shredded cheese and pour whisked egg and milk mixture over it. Bake it for 30 to 35 min until egg custard sets.

Enjoy with your favourite drink or as it is. 😋😋

Take it out from the oven and let it slightly cool down.
