  1. 1 bowlpork and mushroom sauce
  2. 3 bundlesglass noodles (mung bean vermicelli)
  3. Cilantro, to taste
  4. 1/2 cupwater (120 ml)
  5. [Pork and Mushroom Sauce]
  6. 7 ozground pork (200 grams)
  7. 3shiitake mushrooms
  8. 3 clovesgarlic
  9. 3green onions
  10. 1/2 cuplow-sodium soy sauce (120 ml)
  11. 1/2 cupmushroom soaking water (120 ml)
  12. 2 tablespoonsrice wine
  13. 1 tablespoonmirin
  14. Five-spice powder, to taste
  15. White pepper, to taste

    [How to make Pork and Mushroom Sauce]
    Prepare minced garlic and chopped green onions. Heat a pan with oil, sauté the garlic until fragrant, add the ground pork and stir-fry until it breaks apart. Add rice wine and cook until the pork is half done. Then add soy sauce, mirin, white pepper, five-spice powder, and the mushroom soaking water. Simmer for 30 minutes, then add the chopped green onions at the end.
