I hear curry is a huge world of personal interpretation, so here's one of mine. For me if fenugreek is present we have curry.
Steps

Boil the beans, tomatoes, okra, soy sauce, stock, rosemary concentrate and black pepper together in enough water to cover until the tomatoes are completely broken down and you have a thick stew.

Add the carrots and cook a few minutes.

Add all the other herbs and spices and chili oil and cook until the spices are not tasting raw. Remember to keep adding a little water if the curry gets too thick.

When the curry is ready, mix in the onion and green capsicum, switch off the heat, and leave to steam for some minutes until soft.

Serve. Best with rice but also good with chapati.
