Tips
1. Cut potatoes into small sized chunks to ease mashing. You get an almost lump free mashed potato this way with less effort. It also cooks faster.
2. Do not overcook potatoes. They absorb lots of water which makes the cutting process very difficult and you may end up with oily cakes after frying.
3. Adjust sugar quantity depending on if you are eating as it is or with sauce. If eating with sauce, the sugar should be lesser.
4. When adding sugar, remember that sweet potato is sweet. So be moderate.
5. It is a flexible snack which could be eaten as breakfast, brunch, evening snack or just to satisfy those night cravings.

Ingredients

  • Sweet potatoes
  • Flour
  • 1 TBSSugar (more or less depending on quantity of potatoes)
  • Salt (pinch)
  • Vegetable oil
  • Baking powder
  • Water

Steps

    Peel sweet potatoes and put in bowl with water.

  2. 2

    Cut into small chunks. Wash and transfer to a pot.

  3. 3

    Add in water and pinch of salt. Put pot on heat source.

  4. 4

    Allow to boil till very soft, but do not overcook.

  5. 5

    Drain and transfer to a clean and dry bowl. Mash. Ensure there are no big lumps.

  6. 6

    In another bowl, add in sifted flour, sugar and baking powder. Combine.

    Transfer dry ingredients to bowl with mashed potatoes.

  8. 8

    Combine till you get a dough. Knead till you get a slightly stiff dough. Remember dough will still be soft because of the potatoes, but it should be stiff enough for you to comfortably mould.

    Allow to rest for five minutes.

    Dust tray, cutting board or worktable with flour. Also dust rolling pin, and cookie cutters with flour.

    Roll dough and cut with cookie cutters. Remove excess and transfer cut dough to another dusted tray. Repeat process till all dough is exhausted.

    Heat vegetable oil in a pot. Add in few cuts of onion for flavour.

    Deep fry cakes till golden brown or desired colour is achieved.

    Drain in a colander and transfer to a paper towel lined dish/plate.

    You can serve with sauce of choice or as it is.
