In a wok, heat oil,add fennel seeds,dhaniya seed and let it splutter,now add half of chopped onion and sauté it till it becomes pink, now add besan and roast it till sweet aroma starts coming,add all masala,salt and boiled potato mix it well and add pinch of sugar and lastly add remaining onion and turn off the flame and set it aside.

In a bowl take maida,add salt,ajwain,oil to it (oil must be added generously ie around 2 tablespoon in 1 cup maida)and knead the dough,make soft dough and kept it for resting at least 20 to 30 minutes.

Tip :for kachori,dough should be soft and easily stretchable one,

Now spread dough with hands and put a ball of stuffing in the dough as make peda as shown in pic and keep them aside for at least ten minutes.

Tip: if peda kept aside for ten minutes it assures that it shall not open up in oil while frying.

Now take peda spread it into puri shape by hand.

Fry each kachori first for five minutes then take it out,like this fry all kachori

Once all fried for five minutes each,now again fry each one at sim flame till it turn golden colour

Tip : keep flame at sim through out the process of kachori frying.
