This is a recipe for something with a cup of tea moment. I used to go and see John and Audrey (my In-laws) with my wife, at the time, at their farm and Audrey would always have homemade cakes and tarts for after Dinner or with a Cup of Tea. John, my ex-wife's Dad, loved this little morsel and so did I. A little bit of something you Fancy, warming yourself by the Rayburn with a Cup of Tea. Yum.

For the Base combine all the ingredients and press the crumble like mixture into the bottom of a shallow baking tin/sheet.

Spread lashings of Raspberry Jam all over the crumb base

For the Topping combine all the ingredients and spread the sweet, eggy, coconuty mix on top of the raspberry jam carefully not to turn the mix pink with jam.

Cook in a moderate pre heated oven at approx. gas mark 5 or 190 degrees Celsius of 20 mins until golden brown.

Tip- if you can, cook slower in a slightly cooler oven than faster in a hotter oven
