Trying to give my beloved migas a more Mexican twist, we added more color and flavor, and guess what... they turned out delicious!

First, cut and fry the tortillas. It's best to use stale tortillas so they don't absorb too much oil. Add the bell pepper and onion, cook for a few minutes, then add the tomato.

Let everything cook until the vegetables change color, then add the lentils. Cook for one minute, then pour in the beaten eggs.

Enjoy with a little sour cream and fresh cheese.
