Ingredients

  1. For Aloo Tikkis:
  2. 5potatoes (boiled and mashed)
  3. 1 cupbread crumbs
  4. 1 cupsoaked poha
  5. 1 tspred chili powder
  6. as per taste salt
  7. as required ghee for shallow frying tikkis
  8. For Ragda:
  9. 1 cupwhite watana (white peas)
  10. 1 tbspginger garlic and green chilli paste
  11. 2onions,finely chopped
  12. 1tomato finely chopped
  13. PinchAsafoetida
  14. 1 tspCumin Seeds
  15. 1 tspchhole masala
  16. 1 tspturmeric powder
  17. 1 tspcumin powder
  18. as per taste salt
  19. as required water
  20. 2 tbspoil
  21. For Green Chutney
  22. 1 cuppudina leaves
  23. 1 cupcoriander leaves
  24. 2-3green chillies
  25. Halfinch ginger
  26. 2-3garlic cloves
  27. Halftsp lemon juice
  28. Halftsp black salt
  29. Halftsp regular salt
  30. For Tamarind Chutney:
  31. 200 gmsTamarind
  32. 200 gmsJaggery
  33. As required black salt
  34. As per taste regular salt
  35. 1 tspCumin Powder
  36. 1 tspred chili powder
  37. Halftsp garam masala powder
  38. For Assembling Ragda Aloo Tikki Chaat:
  39. As required barik sev
  40. As required chopped onions
  41. leavesAs required chopped coriander
  42. As required chaat masala

    For Tikki: Firstly, in a big bowl add boiled and mashed potatoes, bread crumbs and soaked poha and combine together. Now add salt and red chili powder to it. Mix well to make a Dough. Now pinch a ball size portion from this dough and start making Tikkis.

    Heat ghee on a tawa and start shallow frying Tikkis one by one till they are nice and crisp. Aloo Tikkis are ready.

    For Ragda: Soak one cup of white peas overnight.In a pressure cooker heat oil, add cumin seeds let it crackle, add Asafoetida, add ginger garlic green chilli paste, saute for a minute and add chopped onions. Saute till onions are golden brown then add chopped tomato give it a good mix. Cook till tomatoes are soft and mushy.Now add washed and Soaked white vatana in the cooker. Add turmeric powder and chhole masala give it a good mix. Add salt and water. pressure cook it for 4-5 whistle

    For Green Chutney; In a blender jar add, pudina leaves, coriander leaves, green chillies, garlic cloves, ginger, salt, lemon juice and Cumin Powder. Blend it in a smooth Puree. Green Chutney is ready.

    For tamarind chutney:Soak for 2-3 hours tamarind to make it soft and mushy.Now grind and strain the soaked tamarind two to three times to get a clear tamarind extract.In a kadhai add tamarind extract and jaggery. Cook till Jaggery is completely melted and mixed with tamarind extract.Now add salt, garam masala, red chilli powder and cumin powder. Switch off the flame. Tamarind chutney is ready. Let it cool down completely and store in an air tight container in refrigerator.

    Keep ready all the ingredients - ragda, Tikkis, chopped onions, chaat masala, Barik Sev, tamarind chutney, pudina chutney, curd (optional).

    Finally in a plate, arrange all the ingredients add hot ragda, now add Tikkis, add tamarind chutney, pudina chutney, chopped onions, chaat masala, chopped coriander leaves and finally Barik Sev..
