SEV is made from soft dough of besan (gram flour),oil and spices. Dough is transferred into sev press and pressed to form a thin strands of sev which are deep fried. Inspiration I got from my grand mother.

SEV is made from soft dough of besan (gram flour),oil and spices. Dough is transferred into sev press and pressed to form a thin strands of sev which are deep fried. Inspiration I got from my grand mother.
Steps

First sieve the gram flour, to avoid any lumps on the flour. Combine all the ingredients in a bowl. Mix well.

Add water little and knead into a soft dough. Give rest for sometime. At the end add hot oil and again knead it well.

Grease the sev press mould with little oil, transfer the dough into it, and press it properly and cover it with lid.

Press out thin strands of the sev into hot oil(medium hot), a few at a time into a circular motion and deep-fry on a slow flame. Just in 1-2 mins, The dough you pressed in oil will start rise above, just turn to other side after 2 mins and fry till the bubble stops or you can see foam like forming (in pic 3). Very light colour. Don't deep-fry for too long. It will change to dark brown.

Repeat step 4 to deep-fry the remaining sev in more batches.

Keep aside to cool for 5 minutes. Transfer the sev into a deep bowl and break into pieces lightly using your fingers.

Store the sev in air-tight container and use as required.
