Nankhatai (Eggless)

As usual this weekend too was fully occupied but ultimately baking these Perfect, super Delicious and melt-in-mouth "Nankhatai" made my sunday and recharged mein with fresh energy for another great week!
Nanakhatai was on my baking list already and then got to make them today for the ongoing contest of Cooking Technique[Bake] Challenge at #CookPad.
Nankhatai is a traditional Indian shortbread Cookie and in the authentic recipe of these sweet and savory cookies, Ghee, Maida (plain flour), Rava (sooji or semolina), Besan (gram flour), Sugar and Cardamom powder are used.
Did I tell you this was my first attempt at making Nankhatai and to my great surprise this came out just perfect!

Sift the dry ingredients Maida, Besan, Sooji, baking powder, baking soda, salt and cardamom powder. Mix well and keep aside.

Blend Ghee, Sugar, Malai and Curd to a smooth and creamy mixture. (I used food processor here to blend)

Now pour the creamy mixture to the dry ingredients and Combine everything together to form a non-sticky dough. Note :- If it's dry add 1 or 2 tsp milk and if it's sticky(like mine was) keep it in freezer for just 5-10 mins and then again mix well.

Pinch medium sized balls from the dough. Roll them in palm and slightly flatten. Place them in a greased baking tray while keeping some space between them. Make some criss-cross design on the nankhatai with a toothpick and press silvered almonds on top gently.

Bake them in a pre-heated oven at 180°C for 18-20 mins till light golden.

When cooled, keep Nankhatai in an airtight container.
