Today, I have a dish to present: "Tom Yum with Nile Tilapia and Mushrooms." Nile tilapia is one of my favorite ingredients. Whether boiled, stir-fried, curried, fried, or steamed, it's delicious because the flesh isn't too soft. I like it!!!👍🏼
Cooking Instructions
- 1
Clean the Nile tilapia by removing the gills. Check the belly area for any black parts and wash them off completely (the black part in the fish's belly can cause a fishy smell). Then, cut the fish crosswise and let it drain. Wash the mushrooms and cut them, then set aside in a bowl.
- 2
Boil water until it bubbles. Add the Tom Yum ingredients, salt, seasoning powder, and MSG. Wait for the water to boil again, then add the fish (cook for about 10-15 minutes). Do not overcook, or the flesh will become mushy. Skim off any foam, add the mushrooms, and add the lime (30 seconds to 1 minute). Season to taste and serve.
- 3
Pound the chili peppers finely. Add the chili, followed by lime juice, fish sauce, and chopped cilantro leaves. Mix well (season to your liking) 😊☺️👍🏼🍴

📌 When buying fish at the fresh market, choose live fish and have the seller prepare it for you. (If you choose a prepared one, check the color of the gills or press the flesh to ensure it's not soft or mushy.) When cooked, the fish will be sweet.🐟🐠🐡🐬🐳🐋

When it comes to pasta, it has to be dried, for my preference. When it comes to noodles, it has to be freshly handmade. That's weirdly me. Lol! Fresh pasta just doesn't have that chewy springy texture as compared to dried pasta. Most restaurants will agree with me on that. I was supposed to serve this pasta with some fresh scallops and good quality anchovies, but those cost quite a lot of money here. I opted for dried ones instead. If you have the luxury of having those fresh at affordable prices, why not? You are in fact the master of your pasta.I agree that pasta is probably the easiest dish to make, but it is also the hardest to get it right. Timing is very crucial. Cos you have to cook the pasta just before al dente and transfer it into a skillet to cook again to allow the sauce can mingle well together. The most important thing is not to add olive oil into the pasta water. It will prevent the sauce from coating with the pasta. And do not discard the pasta water away. That is seasoned starchy water which is the key element to homogenize the sauce and pasta into 1. Anyway, I hope you will give this recipe a try. Daniel Lim -
