My favorite restaurant is a place called Thai Ginger. My favorite dish is Tom Yum soup. This is my quick and easy version of a very delicious hearty soup. Note: with the remove from heat method the vegetables will be extremely crunchy and The shrimp will be just cooked through.

Ingredients

  1. 10 mediumsize raw shrimp that have been Shelled, tailed and deveined .
  2. 1/2 cupBite size carrots. ( I used crinkle cut, prepackaged raw carrots)
  3. 1 cupFresh broccoli florettes
  4. 1 cupFresh snow peas
  5. 10Sliced shiitake mushrooms
  6. 1 boxThai Rice noodles
  7. 1Container of Thai ginger infused chicken broth.
  8. 2 tbspFish sauce
  9. 3 dashThai chili oil
  10. 2 cupWater
  11. 1Very thinly sliced Thai chili. ( if you can't find a Thai chili Serano pepper will work)

Steps

  1. 1

    In a large stockpot bring Thai ginger flavored broth and water to a boil.

  2. 2

    Once broth is at a hard boil , remove from heat and add all ingredients EXCEPT for the shrimp.

  3. 3

    Cover and let set for 3 to 5 minutes. Next, remove lid and add shrimp. Cover and let sit for an additional five minutes.
