In a mixing bowl take maida, wheat flour, salt and mix together. Add water as required and knead to a soft dough. Add oil and knead for another minute. Cover and set aside for 10 mins.

In a pan heat oil, add crushed garlic and fry till raw smell goes away. Add sliced onions and fry for a minute.

Add shredded cabbage, carrots and thinly sliced capsicum and saute for a minute. Add salt and pepper powder and mix well. Set aside to cool down a bit.

Meanwhile divide the dough into 3 equal parts and roll into thin roti. Cook them on tawa with oil. Remove onto a plate.

For 1 frankie take 2 eggs in a bowl. Add salt, 2 pinch of pepper and chili powder. Beat well with a fork.

Heat a pan. Coat with 1/2 tbsp oil and pour the eggs into the pan and swirl them pan to spread evenly.

Place the roti immediately and press lightly to stick to the omelette. Cook on medium flame until done. Flip and cook for 30 seconds.

Remove onto a plate with omelette side up. Spread 1 tbsp mayonnaise and 1 tsp ketchup.

Spread vegetable filling in the center and roll it. Prepare other 2 fankies same way.

Serve warm.
