Shredded Chicken Salad

Ingredients

  1. Veg oil
  2. 1 1/2 cupsrice sticks
  3. 2 cupscooked chicken (I buy precooked shredded chicken)
  4. 3 1/2iceberg lettuce, cut thin
  5. 3green onions sliced
  6. 3/4 cuptoasted sliced almonds(or peanuts or cashews)
  7. to tasteCilantro
  8. to tasteSesame seeds, toasted
  9. Dressing:
  10. 1 tspsalt
  11. 1 tspdry mustard
  12. 1 tspsesame oil
  13. 1/2 tsp5-spice
  14. 1/4 cupvegetable oil

Cooking Instructions

  1. 1

    Pour oil in 10” skillet, 1/2 inch deep. Pour in rice sticks broken up. Take out when exploded and set aside on paper towel

    Dressing: Mix all together in small bowl: 1/4cup veg oil,1 tsp salt, 1 tsp dry mustard, 1 tsp sesame oil, 1/2 tsp five-spice. *you can double this if you want more dressing.

    Mix rice sticks, lettuce, chicken, onions, nuts, and cilantro, all at last minute. Toss with dressing. Serve!
