Spinach-Cornmeal tikki is an interesting and Healthy snack recipe where the tikkis are made with spiced Spinach(palak) puree and Maize flour(Corn Meal or Makke ka atta) and then they are shallow fried in a pan.

It is a healthy and perfect tea-time snack which is crisp on the outside and soft on the inside. Kids will also happily eat it.

Well I was left with some palak puree from Spinach-Corn sabzi made for yesterday's dinner which I wanted to utilize into some innovative dish. And the outcome is just amazing, isn't it!

Ingredients

  • 200 gmsSpinach
  • 1 cupMaize Flour
  • 1medium sized Potato, boiled and grated
  • 1small onion, finely chopped
  • 1/2 inchGinger
  • 3Garlic cloves
  • 1/2Green chilli
  • 1/4 tspred Chilli powder
  • 1/2 tspChat masala powder
  • 1 pinchAsafoetida
  • to tasteSalt
  • 4 tspGroundnut oil for shallow frying

    First quickly blanch the spinach and grind it with garlic, ginger and green chilli without using any water to a smooth paste.

    Now combine this palak puree with Maize flour(makke ka atta), chopped onion, boiled & grated potatoes, salt, heeng, red chilli powder and chat masala powder. Mix well to form a smooth dough.

    Make 6-8 thin tikkis (make thinner than normal tikki so that flour is cooked properly and it becomes crisp).

    Heat oil in a pan, cook tikkis on medium flame till golden brown and crisp from both the sides. Enjoy hot with ketchup and a cup of hot tea!
