Pizza or Polenta?

I love polenta and enjoy experimenting with recipes. I like it white, coarse, or yellow; I like it soft, smothered in a rich sauce with sausage, stew, or with mushrooms and melty cheese. I also enjoy it fried in pieces or sliced thin like lasagna. The only problem has always been the preparation, which used to mean 40 minutes standing by the stove and a lot of elbow grease. But a friend shared a trick with me, and since then I make it much more often.

Ingredients

1 hour 30 minutes
Serves 2 servings
  • 1 1/3 cupscoarse cornmeal for polenta (200 grams)
  • 3 1/3 cupswater (800 grams)
  • Salt
  • A fewcherry tomatoes
  • 3 1/2 ouncesmozzarella or other cheese (100 grams)
  • 1 handfulolives
  • Oregano
  • Salt and olive oil

    Bring the lightly salted water almost to a boil. Gradually pour in the cornmeal, stirring quickly with a wooden spoon. Cover the pot with a damp kitchen towel and then place the lid on top to seal it well. Reduce the heat to low, using a heat diffuser if you have one. Cook for 40 minutes without ever opening the lid.

    After 40 minutes, turn off the heat and quickly stir the polenta, which should now be ready and creamy.

    Grease a baking pan with a little olive oil and pour in the polenta. Flatten it with a spoon to shape it like a pizza. Let it cool slightly so it firms up, then top with mozzarella, tomatoes, olives, oregano, a drizzle of olive oil, and a pinch of salt.

    Bake at the highest temperature for about 15 minutes until the "pizza" is ready!

    Note: The amount of water depends on your preference—use less for a drier polenta. You can also change up the toppings as you like. This classic polenta pizza can become capricciosa, with mushrooms, four cheeses, and more.
