The basic ingredient of this typical food is duck meat. However, it is specially cooked and seasoned in the Torajan way.
The spices that are usually used in cooking dangkot are cayenne pepper, shallots, garlic, ginger, turmeric, pepper, galangal, lemongrass, and various other spices that can strengthen the taste. And in this time i modified using Pork and this dangkot should be cooked in a low heat for such a long time (approximately 45 – 60 minutes) and you have to keep on stirring on the spices to prevent them to get burnt.
Tips : Use non stick pan (Teflon).

Ingredients

  • 1kilo gram of pork meat cut into pieces
  • 125 mlwater
  • 5 tablespoonsoil
  • Ground and Spices ;
  • 7-1lemongrass
  • 500 gramgrated galangal
  • 5shallot
  • 4 clovegarlic
  • 3 pieceskeffir lime leaves
  • 13-15bird eye chillies (deepen on your spicy level)
  • 1 teaspoonpepper
  • 2 teaspoonturmeric powder
  • 2 tablespoonsalt
  • 1 tablespoonsugar

Steps

  1. 1

    Add the finely grated galangal and turmeric, and lemongrass into a food blender. Add 125 ml of water.

  2. 2

    Blend it using low speed for 5 minutes, then high speed for another 5 minutes until the texture is soft enough.

  3. 3

    Strain the blended process to separate the dregs and water extract.
    Take out the dregs.
    Pour vegetable oil into the pan. Heat the pan with low heat.

  4. 4

    Sautee shallots and garlic until it has aromatic fragrance and brownish color. Add the dregs. Gently stir with low heat.

  5. 5

    Add sliced keffir lime leaves. Stir well.
    Add salt and pepper. Turn off the heat. Amd Ready to serve with Rice or any dish you like.
