Our late grandma used to prepare this when we were young kids. Hers very simple. She used to make this using just a small wok over her old gas stove. A - In a large bowl, Mix everything together until well combined.

B - Preheat oven to 150°C to 160°C. Spray muffin pan with nonstick spray or grease with butter.

Assembling - spoon coconut mixture (A) into each muffin cup, filling only half. Gently Level and sprinkle some sugar. Sprinkle with very little sugar. Next, Top again with coconut mixture, filling each all the way to the top and then, press very lightly to level.

Bake for 25-30 minutes or until the sides turn lightly brown. Remove from the oven and leave to cool.
