Very easy and lightly sweetened granola bars. You can substitute whatever nuts or seeds you prefer. I got a mixed seeds packet which contains melon, pumpkin and sunflower seeds. This makes about 20 bars.

Ingredients

20 bars
  1. 1 cupoats (I used instant oats)
  2. 1/2 cupmixed seeds
  3. 1/4 cupshredded unsweetened coconut
  4. 1/2 cupbaked almonds
  5. 13-15dates
  6. 3 tbspscoconut oil
  7. As neededSea salt

Cooking Instructions

  1. 1

Mix coconut oil with oats and seeds till combined.

  2. 2

Toast on pan on low heat for 10-15 mins till fragrant. Alternatively, bake in the oven for 15 mins at 180 degrees. Let cool.

  3. 3

Mashed soft dates and almonds with oat mixture. I use plastic gloves and just smooshed them together. Can also use a big ziplock and have fun smooshing them!

  4. 4

Line container with parchment paper. Press mixture in it.

  5. 5

Sprinkle sea salt on top. Freeze for 1 - 2 hours before cutting in bars.
