This quick and easy recipe is great for a lunch that’s a bit different. Roasting the feta with lemon and coriander gives a really intense, salty, creamy flavour.

This quick and easy recipe is great for a lunch that’s a bit different. Roasting the feta with lemon and coriander gives a really intense, salty, creamy flavour.

Pre-heat oven to 200C
- 2
Put feta whole on baking sheet on roasting tray and cover in lemon zest, coriander seeds, pepper and a drizzle of oil, then roast for 25 mins
- 3
Place large chunks of roasted feta on top of salad - I used tomatoes, spring onions, black olives, mint and basil drizzled with balsamic, olive oil, salt and pepper. Serve with fresh bread
