Preheat the oven to 180°C.
Prepare an 9-inch baking tray by greasing it with butter and dusting with flour, or lining it with parchment paper.

In a large bowl, whisk together eggs and sugar for 10 minutes, using a mixer, or until fluffy and creamy.

Add vanilla and mix well. Gently fold in the flour in 3 potions using a hand whisk, until all the flour is well incorporated. Don’t over mix the batter

Pour your batter into your greased baking tray, sprinkle raisins that are lightly dusted with flour.

Bake for 30minutes or until the cake is golden brown and a toothpick inserted in the center comes out clean.

Let the cake cool in the tray for about 10 minutes run a sharp knife around the edges of the tray to release the cake before turning it out onto a rack to completely cool.

Gently mix the flour into the egg mixture using light hands so as not to deflate the eggs too much.

Serve with a warm cup of tea or coffee.
