This isn't really a "recipe" but it's one of my favourite, go-to, healthy breakfasts which ensures that I get at least 2 of my 5 a day before I've done school drop off! Got to have a cuppa with it too!

Ingredients

10 minutes
1  person
  1. 1 tspolive oil
  2. 6plum or cherry or tomatoes, halved
  3. handfulmushrooms - peeled and sliced
  4. good handful of fresh spinach
  5. chilli flakes
  6. good pinch of salt
  7. squeezelime juice
  8. wholemeal toast - I like warburtons thins as theyre not too heavy
  9. 1fresh egg
  10. 1little butter for sprea (optional)ding on the toast

Cooking Instructions

    Heat the oil in a non-stick pan and fry the tomatoes mushrooms for a few minutes.

    Add the tomatoes and fry for a few minutes more until soft.

  3. 3

    Add the spinach, chilli and salt and cook for a few minutes with the lid on.

  4. 4

    While the spinach is cooking, pour some boiling water in a pan and reduce to a simmer.

    Crack the egg into a small, heatproof bowl and carefully lower into the water

  6. 6

    Poach the egg for approx 3 minutes (leave a minute longer if you prefer the yolk to be firmer rather than runny)

  7. 7

    Toast the bread and add a squeeze of lime to the mushroom mix before spooning onto the bread.

  8. 8

    Top with your poached egg and some chilli flakes. Enjoy with a nice cuppa and the crossword!
