Pumpkin pasta sauce

It’s very much pumpkin season here and a great time to get creative. This is inspired by a recipe from Cookpad Spain for pumpkin chips which suggested using the leftover roasted flesh to make a creamy sauce. So I did just that. 🇪🇸 🎃

Rough chop the onion and garlic and sauté for a few minutes then add to the blender with the roast pumpkin and other ingredients.

Blend until smooth. I used oat milk this time but I think I might try substituting for a cashew cream next time.

Mix through freshly cooked pasta, I served mine with the pumpkin chips I talked about above. Delicious. Happy autumn! 🍂
